Chia Seed Pudding

Chia Seed Pudding

  • 1/4 cup chia seeds
  • 3/4 cup coconut milk (or rice or almond)
  • 1/2 cup coconut water or apple juice
  • 1/4 cup shredded unsweetened coconut
  • 1 tsp pure vanilla extra
  • 1/2 cup freeze dried raspberries, peaches, and/or strawberries
  • ¼ cup of thinly sliced almonds
Mix thoroughly coconut, chia seeds, coconut milk, coconut water, vanilla in a bowl.
Place in the refrigerator for a minimum of 2 hours.
Top with fruit and almonds before serving.
